Iyengar bakery style sandwich| Open sandwich

The other day when we were eating pizza, my husband said he was reminded of Bangalore Iyengar bakery toast. Well, I had no idea how they tasted but  vaguely remembered reading about it in some food blog. My dear friend google instantly gave me what I was looking for. I saw that some of them had toasted the bread slices on the tawa, but I decided to follow Champa's version. I thought I could multi task and do the masala while the bread was in the oven. Plus, I need not toast the bread one by one. Also as Champa mentions, the bread cooks uniformly and also uses less oil.

Adapted from Champa
Ingredients
Tomato -2 medium
Red onion - half
Carrot - 1/2 big, grated
Capsicum - half
Cilantro
Jeera
Ghee
Salt
Turmeric powder
Red chilli powder
Oil

Method
*Preheat oven to 325F and grease a baking tray with oil
* Spread some ghee on the bread slices and toast in the oven for around 10 mts
* In the mean while, heat a skillet heat oil and when hot, add jeera and allow it to splutter
* Add onions and fry
* When onions are done add chopped capsicum and cook until they are soft.
* Add tomatoes and cook until they are mushy
 * Add grated carrots and cook
* Add turmeric powder, chilli powder and salt.
* Cook for few more minutes and then add cilantro. Mix well.

 * When you are doing the masala, keep checking to see if the bread is toasted.
* Take the bread slices out of the oven spread the masala mixture evenly.
* Keep them back in the oven for 15 mts.

Notes: Rotate the tray in between to ensure even cooking
I topped couple of slices with grated mozzarella half way through. I liked the cheesy version better.
Do not skip baking the slices without the masala. If not, they will become soggy.
For the cheesy version, you can layer the slices with pizza sauce and then spread the masala. It will be a pizza on a bread:)

While making the masala, if you find the masala to be dry, add a little ketchup to make it more spreadable.
This makes  3-4 slices.

I have not had the original Iyengar bakery toast so I cannot say how close this is to the original. But it tasted great. This is also a great lunch box option.
